Smoked ham hock or bacon (optional)
  • 4 oz smoked ham hock or bacon (optional)
Butter
  • 2 tbsp butter
Cumin
  • 1 tsp cumin
Turmeric
  • 0.5 tsp turmeric
Black pepper
  • 0.5 tsp black pepper
Cream (optional)
  • 0.5 cup cream (optional, for richness)
Fresh parsley and crusty bread for serving
  • 1 Fresh parsley and crusty bread for serving
Salt to taste
  • 1 Salt to taste

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Melt butter in a large pot, then sauté onion, leek, carrots, and celery for 6-7 minutes until softened with a glossy, lightly golden look.
Bloom the spices
  1. Add garlic, cumin, turmeric, and black pepper, then cook for 2 minutes, stirring until fragrant.
Simmer the lentils
  1. Add rinsed lentils, broth, and ham hock if using, then bring to a boil until the surface bubbles actively.
  2. Reduce heat and simmer for 30-35 minutes until the lentils are completely tender and falling apart.
Finish the texture
  1. Remove ham hock and shred any meat, then return the meat to the pot and discard the bone.
  2. Blend about half the soup for a thick, textured consistency, leaving some chunks for body.
  3. Stir in cream if using, then season with salt until the flavor is balanced and creamy-looking.
Serve
  1. Serve hot with fresh parsley and crusty bread for dipping.

Notes

For the best texture, blend only about half so the soup stays thick but still has visible lentil and vegetable pieces. Store leftovers in an airtight container in the refrigerator for up to 4 days; freeze up to 2 months (reheat gently, adding a splash of broth if it thickens too much). For a lighter option, omit the ham hock and use vegetable broth plus the optional cream only if desired.
