Build the broth
- Combine chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, thyme, and oregano in a large pot. Bring to a boil over high heat, then reduce to a gentle simmer.
- Simmer for 25-30 minutes until the chicken is very tender. You should see steady bubbles and the chicken should pull apart easily.
Shred and add noodles
- Remove chicken from the pot and shred the meat, discarding bones and skin. Return the shredded chicken to the broth and bring back to a simmer.
- Add egg noodles and cook for 6-8 minutes until tender. Stir occasionally so the noodles don’t stick.
Finish and serve
- Stir in lemon juice and honey, then season with salt and pepper to taste. The broth should look bright and lightly golden with a smooth balance of sweet and tangy flavor.
- Serve hot with extra lemon and fresh parsley. The top should look fresh with green parsley and visible lemon.
Notes
Pro tip: If your chicken thighs are extra thick, keep simmering until they’re truly fork-tender—this matters for texture after shredding. Store leftovers in the refrigerator up to 3 days; for best noodles, reheat gently and add a splash of broth if needed. Freezing: yes, but for best results freeze without noodles and add fresh egg noodles when reheating. Dietary swap: for a gluten-free version, use gluten-free egg noodles and cook them according to the package directions.
