kale
  • 4 cup kale Chopped.
onion
  • 1 onion Diced.
garlic

chicken broth
  • 4 cup chicken broth
heavy cream
  • 1.5 cup heavy cream
Italian seasoning
  • 1 tsp Italian seasoning
red pepper flakes
  • 0.5 tsp red pepper flakes
parmesan
  • 0.5 cup parmesan Grated.
salt and pepper
  • 1 salt and pepper To taste.

Equipment

  • 1 Dutch oven

Method

Brown sausage
  1. Brown the sausage slices in a large pot, then remove and set aside. Cook until the edges are browned and lightly crisp, then transfer off the heat.
Sauté aromatics
  1. Sauté the onion in the sausage fat for 4 minutes. Cook until softened and fragrant, then add the garlic and Italian seasoning and cook for 1 minute.
Simmer soup base
  1. Add the chicken broth and cauliflower, then simmer for 15-18 minutes until very tender. You should be able to easily pierce the cauliflower with a spoon.
Blend and add cream
  1. Blend about half the soup smooth, then stir in the heavy cream. Blend until creamy and uniform, then return it to the pot and stir to combine.
Wilt kale and finish
  1. Add the kale, sausage, red pepper flakes, and parmesan, then cook for 5 minutes until the kale wilts. Stir occasionally until the kale turns bright green and tender.
  2. Season with salt and pepper. Taste and adjust until the flavor is balanced.

Notes

For the creamiest texture, blend just half the soup—leaving the other half chunky for body. Store in an airtight container in the fridge for up to 4 days; reheat gently over low heat, adding a splash of broth if it thickens. Freezing is not recommended because cream soups can change texture when thawed. For a dairy-light option, substitute half-and-half for the heavy cream and use a reduced amount of parmesan.
