Ingredients

Shredded chicken
  • 1.5 lb chicken breast Cooked and shredded
  • Salt and pepper to taste
Soup base
  • 3 cups baby spinach
  • 1 onion diced
  • 6 garlic minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 3 tbsp butter
  • 1 tsp Italian seasoning
  • 0.25 tsp nutmeg
Gnocchi and finishing
  • 16 oz potato gnocchi
  • 0.5 cup parmesan grated
  • Fresh basil and extra parmesan for serving
  • Salt and pepper to taste

Equipment

  • 1 Dutch oven

Method

Sauté aromatics
  1. Melt butter in a large pot over medium heat. Sauté the onion for 4 minutes, then add the garlic and Italian seasoning and cook for 2 minutes, stirring until fragrant.
Simmer creamy base
  1. Add the chicken broth and bring to a simmer over medium heat. Stir in the heavy cream and keep it at a gentle simmer.
Cook gnocchi
  1. Add the potato gnocchi and cook for 3-4 minutes until the gnocchi float and are cooked through. Stir occasionally so they don’t stick.
Add chicken and wilt spinach
  1. Stir in the shredded chicken and baby spinach. Cook for 2 minutes until the spinach wilts and the soup is hot throughout.
Season and finish
  1. Stir in the parmesan and nutmeg. Season with salt and pepper to taste.
Serve
  1. Ladle the soup into bowls and serve with extra parmesan and fresh basil. Add more salt and pepper if needed.

Notes

Pro tip: If the soup thickens as it sits, loosen it with a splash of chicken broth when reheating. Store leftovers in the fridge up to 3 days; freeze up to 2 months (gnocchi may soften slightly). For a lighter option, use half-and-half instead of heavy cream while still adding parmesan at the end.
