Method

Build the broth
  1. In a large pot, combine chicken, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, cayenne pepper, and dried thyme.
  2. Bring to a boil, then reduce heat to a gentle simmer and cook for 25-30 minutes until the chicken is cooked through, with visible simmering bubbles around the edges.
Shred and add noodles
  1. Remove the chicken, shred it, and return the shredded chicken to the pot.
  2. Add egg noodles and cook for 6-8 minutes until tender, stirring occasionally so the noodles don’t stick.
Finish and serve
  1. Stir in honey, lemon juice, and apple cider vinegar, then season with salt and pepper to taste.
  2. Serve hot and top each bowl with fresh parsley and extra lemon wedges for squeezing.

Notes

Pro tip: Simmer gently after boiling (avoid a hard boil) to keep the broth clear and the chicken tender. Refrigerate leftovers in a sealed container for up to 4 days; reheat on the stovetop until steaming. Freezing is not recommended because egg noodles can soften when thawed. For a dietary swap, use gluten-free egg noodles if you need to keep it gluten-free.
