  • 0.25 fresh parsley Chopped, for serving.
  • 0.5 lemon Extra lemon wedges or juice to serve, optional.

Equipment

  • 1 Dutch oven
  • 1 Immersion blender
  • 1 Large pot

Method

Sauté aromatics
  1. Heat 1 tablespoon olive oil in a large pot over medium heat, then add the diced onion and carrots and sauté for 5 minutes until softened and fragrant.
  2. Add the minced garlic and all spices (cumin, turmeric, coriander, smoked paprika, and cayenne), and cook for 2 minutes until very fragrant, stirring constantly to prevent burning.
Simmer lentils until dissolve-soft
  1. Add the rinsed red lentils and vegetable broth to the pot, then bring everything to a boil.
  2. Reduce the heat to a gentle simmer and cook for 25-30 minutes, stirring occasionally, until the lentils have completely dissolved.
Blend and finish
  1. Use an immersion blender to blend the soup until smooth and silky, pausing as needed to avoid splashing.
  2. Stir in the fresh lemon juice and lemon zest, then season with salt and pepper to taste until balanced.
Make crispy shallots
  1. In a small pan, fry the thinly sliced shallots in olive oil over medium heat until crispy and golden, then drain briefly on a towel if needed.
Serve
  1. Ladle the soup into bowls and top with the crispy shallots, fresh parsley, and a drizzle of olive oil for serving.

Notes

Pro tip: zest the lemon before juicing so you don’t miss the bright aroma. Store leftovers in the refrigerator for up to 4 days; reheat gently on the stove, thinning with a splash of broth if needed. Freezing is okay for up to 2 months, but add the lemon juice after thawing for the freshest flavor. For a lighter version, use low-sodium vegetable broth and reduce olive oil in the soup by 1 teaspoon while keeping the finishing drizzle.
