Truffle oil
  • 1 truffle oil for serving
Salt and pepper
  • 0.5 salt and pepper to taste
Hot water
  • 2 cup hot water for soaking porcini

Equipment

  • 1 Dutch oven

Method

Caramelize onions
  1. Melt the butter with the olive oil in a large heavy pot over medium heat. Stir occasionally and cook the onions for 35-40 minutes until they turn deeply golden and caramelized (dark mahogany color at the edges).
Brown mushrooms and build flavor
  1. Add the garlic and the sliced mixed wild mushrooms to the pot. Cook for 8 minutes, stirring as needed, until the mushrooms are browned.
  2. Pour in the dry sherry (or white wine) and deglaze the pot. Cook for 2 minutes, scraping up any browned bits for a richer base.
Add porcini broth and simmer
  1. Drain the soaked dried porcini while reserving the soaking liquid. Add the porcini and the strained soaking liquid to the pot along with the broth, thyme, and balsamic vinegar.
  2. Bring the soup to a simmer and cook for 15 minutes. Keep it gently bubbling so the flavors meld.
Wilt kale and finish
  1. Add the chopped kale to the simmering soup. Cook for 5 minutes until wilted and vivid green.
  2. Season the soup with salt and pepper to taste. Ladle into bowls and top with Parmesan shavings and a drizzle of truffle oil.

Notes

For the deepest onion flavor, let the onions darken without rushing—keep the heat at medium and stir often so they caramelize evenly. Store leftovers in an airtight container in the refrigerator up to 4 days; reheat gently on the stove. Freezing is not recommended because kale can soften after thawing. Dietary swap: use vegetable broth (and a dairy-free butter substitute) for a vegetarian version while keeping the same mushroom-forward flavor.
